“HALLOWEEN IS OVER… BUT THE PUMPKINS ARE NOT” — GESCHE (GERMANY)

Halloween is just about over, but there is one thing that will be around for a few weeks longer: pumpkins. I personally love autumn because of its pumpkins. They cannot be used only to make a funny Halloween decoration, but they also make a cheap and delicious meal without a lot of effort. One pumpkin only costs around 1,50 € and will be enough for two to three meals. So just the right thing for stressed students like us, living on a budget. And pumpkin can be used in so many different ways: soup, drinks, bakery… So, what can be better as a break from your exams, tests and presentations than sitting down for a good meal in between?

You think it is too much work to hollow out pumpkins? Then just use Hokkaido pumpkins which you see below. You can eat them with the skin which saves you a lot of time and nerves. You only need to hollow out the stones in the middle. So maybe you want to try one of my favorite and easy pumpkin recipes to make your autumn a little bit brighter while the days are getting darker and darker?

Pumpkin salad

Take:

  • 700 g pumpkin;
  • 1 apple;
  • 50 g sunflower seeds;
  • ½ lemon (juice);
  • 3 table spoons oil (olive or walnut);
  • 4 table spoons apple juice;
  • brown sugar if you like.

Mix the lemon juice, the oil and the apple juice. Peel the pumpkin (it will be more delicious for the salad) and take out the stones. Then grate the pumpkin in the dressing. Peel and cut the apple and add it. In the end you spread the seeds on the salad and your meal is ready!
Pumpkin soup

You need:

  • 1 pumpkin;
  • 4 carrots;
  • 4 potatoes;
  • 1 onion;
  • 200 g cream;
  • water;
  • curry;
  • salt;
  • pepper;
  • a pinch of sugar and oil.

First, you cut the vegetables. Then you fry the onion in a bit of oil until it gets brown. Add the other vegetables and stir everything. Then add water and let the soup boil for about 20 minutes. When the vegetables are done, add the cream and the spices and sugar. In the end you mash everything either with a blender or with a potato masher.

And then? Invite some friends for dinner. Or you will have enough food for the next two days as well.

Pumpkin jam

You take:

  • 1 kg of pumpkin;
  • 1 package of gelling sugar (2:1);
  • 50 g butter;
  • 2 lemons (skin and juice).

Cut the pumpkin and stew it in the butter for about 15 minutes. Add the gelling sugar and mash it after a short while. Add the rubbed skin and the juice of the lemons and cook it for 5 minutes. If you like, you can add 1 table spoon of rum. Afterward, you fill it into glasses while it is still hot.

When it is cold, it will be a great present for pumpkin lovers among your friends and family. Since Christmas is coming up next month, you will be prepared perfectly for that.
